Running & Pancakes
Several years ago I picked up running and am now working toward the goal of a race in each of North Carolina's 100 counties.

Along with a great way to see my home state, running has brought some wonderful people and experiences into my life.
Tequila Tonight, Tomorrow We Run.....
Really? Tequila before running?!?
Those of you who know Chris & I know that we enjoy good tequila.
Back in 2014 the night before my first 5K we went out for Mexican and the restaurant had a nice selection of tequila. I wanted one, but was worried about my race the next morning. Chris pointed out one tequila with a full meal shouldn't matter... and if it did I wasn't really ready to run.
I had the tequila, and I had a great race the next morning.
And thus a superstition was born....
Why Pancakes....
One name - Big Ed's
If you have not been there, it is worth a trip to Raleigh.
Pancakes as big as my head!
And they have a deal where if you eat three in forty-five minutes you get a t-shirt. I have tried, and failed.... but will try again!
When traveling we search out the local diners and have had some amazing food.
So far the very best pancakes have come from Melanie's in Boone. However I still have a lot of counties to go....
100 County Rules...
My goal, my rules. But Chris does get input and is my go to for official rulings when we aren't positive about something.
1 - It has to be an official race. Runner's bib, start / finish line. Any distance, any type except for a virtual race.
2 - One race may count for multiple counties. Tuna Run got me four counties over four different running legs (yes I'm counting the mile to the finish).
We are still looking for one race that covers two counties in one leg.
That's it; pretty simple really.....
